History
Backstube was founded in 2015 by German entrepreneurs Felix Heinrich and Matthias Bresser, who met while studying in Switzerland. The first store opened in June 2016 at Solli plass in Oslo. The concept — a European bake-off bakery with self-service and low prices — grew rapidly to over 30 locations. In April 2023, parent company Fehmab AS was acquired by Jordanes AS, with revenues of NOK 217 million (2022) and over 300 employees. The Trondheim branch on Thomas Angells gate opened on September 16, 2022.
People
Backstube was started by Felix Heinrich and Matthias Bresser — two German economists who met while studying in Switzerland and both left traditional corporate careers. Their motivation was dissatisfaction with quality and pricing in Norwegian bakeries: 'We both love good baked goods and were never particularly impressed by the quality in Norway.' They imported the German 'Backstube' concept and grew from three branches (2018) to over 30 with 46% annual growth. In 2023, they sold to Jordanes AS.
Backstube represents a new wave of European bake-off bakeries in Norway that has challenged the traditional Norwegian baking industry. The concept builds on Central European bread traditions — pretzels, focaccia, sourdough — at prices well below Norwegian artisan bakeries. The model has sparked debate: traditional bakers argue it undermines Norwegian food culture and local jobs, while supporters claim it democratizes access to European baked goods. Bread and dough imports to Norway increased by 83% between 2010 and 2023.
Backstube operates on a European bake-off model: frozen dough products are imported and finished in-store ovens throughout the day. The range includes sourdough bread, rolls, focaccia, pretzels (German-style), butter croissants, cronuts, borek, filled baguettes, cakes, and pies. The chain markets itself as 'Europe's baking favorites at affordable prices' and offers a wide vegan selection. The format is self-service — customers pick items themselves with tongs and trays.
Thomas Angells gate is a central pedestrian street in Trondheim's city center, named in 1841 after merchant and philanthropist Thomas Angell (1692–1767), who bequeathed his fortune to the poor of Trondheim. The street runs east-west between Cicignons plass/Sondre gate and Munkegata. Backstube is situated in the middle of the pedestrian zone, surrounded by shops, cafes, and restaurants — one of Trondheim's busiest commercial stretches.
Backstube at Thomas Angells gate 12B is located in the pedestrian street in Trondheim city center (Midtbyen), in a building owned by E C Dahls Eiendom. The premises are at street level with direct access from the pedestrian zone. The concept is grab-and-go: self-service with tongs and trays, quick payment, and designed for takeaway. There is also a second Backstube branch in Trondheim, at Nordre gate 3.
