History
Blomster og Vin opened in October 2023 at Nedre Bakklandet 21A in Trondheim. General manager Ingrid Mathea Norwich (28) purchased the domain 'blomsterogvin.no' back in 2017, but it took six years before the dream was realized. The premises previously housed the antiques shop Den Gamle Krambod, which specialized in building details and spare parts for old houses. During renovation, the owners preserved original walls and doors from the 1940s to maintain the authentic character of the space.
People
Head chef Fabricio Bianchi Dos Santos (36) is a trained chef with experience from Gordon Ramsay's kitchen in London, Clarion Hotel Brattora, and Kraft Bodega in Trondheim. Alongside Blomster og Vin, he runs the wine import company Vinitalia Norge (Broske & Bianchi Wine Import AS) together with Rolf Jarle Broske, as well as the Italian neighborhood restaurant Frumento in Strindheim. General manager Ingrid Mathea Norwich (28) handles the day-to-day operations. Gian Carlo Buoso helped connect Norwich with the property owners on Bakklandet.
Blomster og Vin is one of few places in Trondheim combining a wine bar, pinseria, and café under one roof. The wine list is constantly evolving with a focus on natural wines and wines from Eastern Europe — including Moldova, Romania, and Ukraine — alongside Italian wines from Piedmont. The restaurant also participated in Bakklandet Vinfestival, a local wine festival first arranged in 2023 in Krana-parken on Nedre Bakklandet, where 13–14 importers presented around 200 wines. The festival sold out and was repeated in 2024.
The house specialty is pinsa romana — an ancient Roman bread type that differs from regular pizza in that the dough is made with a blend of wheat, rice, and soy flours, has up to 80% hydration (compared to pizza's 50–60%), and is cold-fermented for a minimum of 24 hours, often up to 72 hours. The result is a crispy exterior with an airy, easily digestible interior. In addition to various pinsa varieties, Blomster og Vin serves bacalao, meat stews, soups, and antipasti. Most ingredients are selected by the staff and imported directly from Italy.

Architecture
The building sits on Nedre Bakklandet, part of Trondheim's historic wooden house district established in the mid-1600s. Bakklandet was originally a working-class neighborhood with warehouses along the river and houses within. After demolition plans for a road project were stopped by strong protests in the 1970s, the entire area was designated for conservation. Blomster og Vin occupies a cellar space with vaulted walls and intimate character — a typical example of the dense, low-scale wooden architecture lining the street. The restaurant also has a separate wine bar called Breiflabben in the basement level.

Location
Blomster og Vin is situated in the middle of Nedre Bakklandet, the lower part of Bakklandet's wooden house district along the east bank of the River Nidelva. The venue is in direct proximity to Gamle Bybro (Old City Bridge, from 1861), connecting Bakklandet to the city center, and to Krana-parken where the Bakklandet Wine Festival is held. The street is closed to through traffic, creating a calm, pedestrian-friendly environment. From the restaurant, it's a short walk to the wharves and the River Nidelva.

Blomster og Vin has two distinct zones: the main floor with pinseria and café, and Breiflabben — a wine bar in the cellar where you can order small dishes and antipasti in a more intimate setting. The concept is designed to serve the entire day: students reading with coffee during daytime, friends enjoying wine in the evening, and elderly patrons having morning coffee. The wine list changes regularly and includes unusual finds from Eastern Europe alongside Italian classics from Piedmont.
