History
Fagn opened in the summer of 2017 in the premises where Heidi Bjerkan's Credo had operated since 1998, at the corner of Credoveita and Ørjaveita in central Trondheim. Founder Jonas André Nåvik had previously apprenticed at Credo and Britannia, worked a year at three-Michelin-starred Alinea in Chicago under Grant Achatz, and served on Norway's national chef team. On February 18, 2019, Fagn was awarded one Michelin star at the Michelin Guide Nordic Countries launch in Aarhus — the same day as Credo. Fagn thus became one of Trondheim's first two Michelin restaurants, barely 18 months after opening.
People
Jonas André Nåvik founded Fagn in 2017. At age 23 he traveled to Chicago to work at three-Michelin-starred Alinea under Grant Achatz — he sent a job application every day at ten o'clock for an entire month before receiving a yes. There he worked 380–400 hours per month for a year. He had apprenticed at Credo and Britannia in Trondheim and also ran the concepts Homedining and Melt. After defending the Michelin star in 2020, Nåvik stepped back from daily kitchen operations to focus on research and development. The head chef role has since passed to Aleksander Aurstad Olsen (2020), Erlend Sitter (2021–2022), and Ådne Børseth Helgetun (from 2022).

The name Fagn derives from Old Norse 'fagna' meaning to be or become happy — the word refers to the welcome, food, and lodging given to travelers at rural farmhouses in old Norway. The restaurant was the first in Trondheim to receive a Michelin star and helped establish the city as a Nordic food destination alongside Credo and Speilsalen (which received its star in 2020). Fagn represents a wave of young Norwegian chefs combining top international experience with a deep focus on local ingredients.
Fagn serves Nordic cuisine based on hyper-local produce from the Trøndelag region, with menus inspired by local traditions and traditional preservation methods. The fine dining restaurant offers large and small tasting menus (10 or 20 courses) from Thursday to Saturday. On Wednesdays, 'Wednesdays at Fagn' features an 8-course menu combining dishes from both fine dining and bistro. Fagn Bistro on the second floor offers rustic Norwegian dishes à la carte or as 3- and 5-course menus. The menu is visually innovative and colorful, with surprise dishes accompanied by explanations and stories.
Architecture
Fagn occupies Ørjaveita 4, a wooden house dating from around 1870 situated directly behind the Byhaven shopping center in Midtbyen. The building spans 428 square meters and was fully renovated in 2012. There has been continuous restaurant operation in the premises since 1988. Ørjaveita is a 69-meter-long alley that was called Sandstredet in the Middle Ages. The restaurant is spread across two floors: fine dining on the first floor and the more casual Fagn Bistro with cocktail bar on the second floor.

Location
Fagn is located at Ørjaveita 4, a narrow alley in Midtbyen directly behind the Byhaven shopping center. Credoveita and Ørjaveita intersect here — both are part of Trondheim's historic alley system with roots going back to the Middle Ages. Credoveita is named after the Danish-born butcher Ole Pedersen Kredoe from the late 1600s, and the street name has been known since around 1750. The area is compact and walkable, in the heart of the old wooden-house district between Nordre gate and Fjordgata.

Fagn fine dining is open Thursday to Saturday from 6 PM. Fagn Bistro is open Tuesday to Saturday from 5 PM, with Saturday lunch from 12:30 PM. Both are closed Sunday and Monday. Fine dining seats approximately 30 guests, and Fagn Bistro has approximately 30 seats on the second floor. Reservations are made via fagn.no or by phone (+47 45844996), Tuesday to Saturday 1–4 PM. Fagn Bistro received Michelin Bib Gourmand recognition in 2021 — an award for good food at moderate prices. The restaurant also offers cooking classes and has a European wine cellar.

Fagn Bistro on the second floor uses the same top-quality produce as the Michelin restaurant below, but in a more casual setting with rustic Norwegian dishes and bold flavors. The bistro has Bib Gourmand status and is a good alternative for those wanting Fagn quality without the full fine dining experience. 'Wednesdays at Fagn' is a hybrid 8-course menu combining dishes from both restaurants — popular among locals. The restaurant has limited seating (about 30 in fine dining), so booking well in advance is recommended, especially for weekends.
